Get ready to be hungry. I mean really, really hungry. This low carb pulled pork is so delicious that every time I make this recipe I am shocked that any pork makes it to the buffet table. Get ready to fill your low carb hamburger buns with melt-in-your-mouth low carb pulled pork.
I’ve cooked pulled pork several different ways—smoked on a grill, slow cooker, Instant Pot—but none were as easy as this recipe. Rub some seasonings on the pork, stick it in the oven for several hours at a low temperature, then to crisp the skin, crank up the oven temperature for a few minutes. No, it does not get any easier than that for such a crowd-pleasing dish.
- 8 pounds bone-in, skin-on, pork shoulder
- 3 ½ tablespoons salt
- 2 teaspoons oregano
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

Tip #1: Feel free to add to the spice mixture. A little cumin would give this pork a Cuban vibe. A little brown sugar would bring it down south (careful, this will raise the carb count a bit). And, if you’re wanting tacos, throw on some chili powder and cumin for a Mexican feast.
Tip #2: To really flavor the meat, season the night before cooking and pop it back in the fridge. In the morning, let it shake off a bit of the chill for an hour before popping it in the oven.
