Shut the front door! 85 calorie ice cream? Yes! No stupid appliance that I will rarely use cluttering up my cabinets? Yes! Well, then let’s do this. This summer is going to be all about 85 calorie ice cream.
As soon as I saw this video, I made the strawberry version. Partly because I always have frozen strawberries, yogurt, and honey on hand, and partly because I am obsessed with strawberries. So, thank you, Hungry Gypsy, for my new favorite strawberry treat!
Ingredients for 85 calorie ice cream
- 1 cup frozen fruit
- 1/2 cup yogurt (I use nonfat, plain greek yogurt)
- 1 tsp honey or sweetener of choice
- Squeeze of lime juice (optional)
Instructions for 85 calorie ice cream
- Place all ingredients in a food processor or powerful blender.
- Blend for a couple of minutes.
- Serve as soft serve immediately or freeze for 4-5 hours in either popsicle molds or freezer-safe container.
Recipe makes approximately 2 cups, 1 cup per serving.
