Low Carb Low Calorie Buffalo Chicken Bites

In my twenties, when I was blissfully unaware of what my food choices were doing to my body, I loved appetizers for dinner. Buffalo wings, mozzarella sticks, potato skins, whatever was on the sampler plate was going down the hatch. In eater form, I was the frivolity of youth. Not anymore. But, even older and wiser, I still crave flavor-filled apps. So, for dinner tonight, I’m satisfying that craving with these tasty low carb low calorie buffalo chicken bites by Sarah Nicole of Forkly.com. Thank you Sarah Nicole!

So, this recipe as-is is low carb—only 3 net carbs per bite. I find four bites alongside a salad or roasted veggies makes a filling dinner. But, to make these bites low carb low calorie, I made a few swaps. Check out Tip Time below the ingredients and nutritional information for low-cal options.

Ingredients:

  • 1 bag mini sweet peppers, seeded & halved
  • 2 cans shredded chicken (leftover rotisserie chicken can also be used)
  • 1/4 cup mayo (we used a sugar free variety)
  • 3 tbsp buffalo wing sauce 
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup Green onions, diced

Nutritional Information (calculated using low-calorie swaps & without cheese)

  • Calories – 56
  • Fat – 2 grams
  • ZERO SATURATED FAT!
  • Carbs – 3 net grams of carbohydrate

Tip Time!

Tip #1: Make it low carb low calorie with a couple of easy swaps. Use light mayo and 2% cheddar cheese to reduce the caloric value to 68 calories per piece. Omit the cheese, and each piece comes in at only 56 calories.

Tip #2: Instead of cheese, drizzle with light ranch dressing or a dollop of blue cheese dressing to really bring home that wing night flavor. (Yes, this will up the calorie count a smidge.)

Tip #3: If you omit the cheese, warm the filling in the microwave then scoop on each pepper halve. The hot filling in contrast to the cool and crisp pepper is delightful.

Tip #4: Double the recipe and freeze half for later.
