Low Carb Fried Mac & Cheese

Yep, I actually eat something called low carb fried mac & cheese. But, with a few simple ingredient swaps and pan frying these babies in just a bit of oil rather than deep frying, these low carb fried mac & cheese cakes are also low in fat. Get ready to feel like you’re cheating on your healthy diet!

Thank you to for an easy and tasty recipe. I rarely find such an indulgent recipe that’s easy enough for a weeknight. This recipe makes approximately 25 cakes so you can feed your whole gang and then some!


  • 1 Head Cauliflower, Riced
  • 1 1/2 Cup Shredded Cheddar Cheese
  • 3 Large Eggs
  • 2 tsp. Paprika
  • 1 tsp. Turmeric
  • 3/4 tsp. Rosemary

Tip Time!

Tip #1: To make this recipe even easier, use a bag of cauliflower rice from the frozen section of your local grocery store. Defrost, then use as instructed in this recipe. Thank goodness I don’t have to make my own cauliflower rice anymore. Sometimes there’s no time!

Tip #2: To get a good crust on your low carb fried mac & cheese, use a cast iron skillet. Make sure to get it and the oil good and hot before setting your cake patties in the pan. Nothing gets a crust on seared or pan-fried foods like cast iron. For easy cleaning, add a bit of water to the pan then crank up the heat. Boil the water to loosen any bits of food then cool and rinse.
