Can you believe how easy that was? Well, Honey Bunches, it really is that easy! According to the Hungry Elephant herself, this recipe was a bit of an accident, as so many tasty dishes are. She had intended to create a no-bake cheesecake, but found the end result too runny. So, she stuck it in the freezer and bing bong boom, the 1 carb ice cream cheesecake was born.

- 1 cup heavy cream
- 1 brick (8oz) cream cheese
- 3/4 cup Stevia powdered sweetener
- 1 tbsp vanilla
Tip #1: If you are worried about the fat content as this recipe was designed for the KETO diet, then switch the full fat cream cheese to a lower fat cream cheese. You can also switch the butter in the crust to a lower fat or lighter butter or margarine. Because the butter is used in the crust as a binding agent you need to keep it in but you do not have to use real butter.
Tip #2: Double the recipe. Your guests are going to want a lot of this!
Tip #3: To create an ice cream cheesecake and not cheesecake ice cream, a springform pan is a must. I’ve tried to use plastic wrap or parchment paper in a round pan, and all I created was a mess.
Tip #4: If you want to create individual servings, divide this recipe into a muffin pan using cupcake liners. These are too cute for words!
