Hmmm. Tacos. I love tacos and think Taco Tuesday is the best day of the week. Alas, tortillas and tortilla bowls and tortilla chips ruin my carb count, but I still want all the flavors of taco Tuesday. I still need the tacos. So, now I have low carb taco Tuesday with this tasty taco pie.
Did you watch the video? Awesome. So, now you know this taco pie is very easy to make. In fact, it looked so simple I thought, “No way is this going to satisfy my taco craving.” But, this past week, I added it to my make-ahead food prep list and to my delight, my kitchen was alive with yummy taco smells. And, most importantly, it tasted like tacos!

- 1 lb ground beef
- 3 tbsp taco seasoning or one packet taco seasoning
- 6 large eggs
- 1 cup heavy cream
- 2 cloves garlic minced
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup shredded Cheddar cheese
And, the nutritional information for 1 serving (recipe makes 8 servings)

Tip #1: Yes, use a glass pie dish for this recipe and any other egg recipes. Glass really does make a difference when it comes to not over-browning eggs. I’ve said it before, burnt eggs are gross. And smell gross. And look gross.
Tip #2: This recipe freezes really well. On Sundays from now on, I will make one of these, wrap it up tightly, and pop it in the freezer. Karen recommends allowing it to thaw at room temperature before warming in the oven. Low carb taco Tuesday any day of the week!
Tip #3: If you are concerned with the fat grams, use egg whites instead of whole eggs. This does not change the flavor of the pie.
Tip #4: Get creative with toppings. I top my pie with guacamole, salsa, and sautéed peppers and onions to make a low carb taco Tuesday feast.
