Zucchini Fritters Recipe | Low Carb Recipe
Once you try this zucchini recipe you will make it again and again. It’s that good! Crisp little savory bites of yumminess.
They fit perfectly into a low carb diet, and they will make you think it’s a cheat day!
Zucchini Fritters are easy to make, once they are grated and the excess liquid is removed they are mixed in a bowl with a few ingredients and fried up crispy in a skillet of hot oil. Who can resist?
Zucchini Fritters can be eaten alone as a snack or an appetizer. They also serve well as a side dish. Add a dollop of sour cream or ranch dip. The entire family will love these fritters and especially the low carb dieter.
Zucchini Fritters are a delicious way to use up all of that fresh garden Zucchini.
2 medium zucchini
1 tsp salt-sprinkled on while draining
1/2 cup grated parmesan cheese
1/2 cup almond flour
1 tblsp coconut flour-optional (absorbs excess liquid)
1/2 tsp baking powder
2 pinches salt
1/4 tsp black pepper- optional
1/2 tsp garlic powder
1/2 tsp onion powder
2 beaten eggs
oil for frying- heat to 325F
