Low-Carb Thanksgiving Dressing


My Keto Stuffing or Thanksgiving Dressing

Okay I practiced this a few times to get it right before sharing. I used dry spices but I am sure fresh would be delicious. Also feel free to add other spices that you enjoy like sage, garlic, cumin etc. Our family doesn’t care for those. Now we no longer will miss our favorite dish at Thanksgiving. We do cauliflower mash, so cauli stuffing just didn’t cut it for us.

3 servings of Keto Waffle recipe ( I only had 2 but 3 would be best)
1/2 cup (4oz) Kerrygold Butter
1 and 1/4 cup (10 oz) onion
1/2 cup (4oz) diced celery
1 and 1/2 cup (12oz) chicken or bone broth
1/2 Tablespoon rosemary
1 Tablespoon thyme
2 Tablespoon parsley
1 teaspoon xanthum gum
1 raw egg beaten (optional)

1. Chop waffles into crouton size chunks and set aside
2. Melt butter in skillet
3. Brown onion and celery
4. Add spices and xanthum gum to broth and whisk together
5. Pour broth mixture into skillet with the veggies
6. Cook on med-high heat until it thickens like a gravy
7. Once thick, shut off heat and fold in your waffle chunks
8. This step is optional but we like it this way. Once it cools a little, fold in and blend the raw egg evenly throughout stuffing/dressing.
9. Put into your greased dish and bake at 350 degrees for 30 minutes or until egg is set.
